Chakli Recipes – Instant Chakali Recipe – Rice Chakali – Murukku Recipe

Welcome to Today we’ll be making chakli with rice flour. We often make chakli with mixing moong dal flour, urad dal flour, and moth dal flour in rice flour but today we’ll be making it with rice flour only. And these chaklis taste really delicious and come out crunchy. Let’s start with the procedure of making chakli with rice flour. First, knead the dough for making chaklis. For kneading the rice flour, heat 1 cup water in any vessel. We have taken 1 cup rice flour, so heat 1 cup water. Allow the water to simmer. Cover the vessel so that water boils quickly. Water has started boiling; add 1 tsp oil, ½ tsp crushed peppercorn, ½ tsp fennel powder, 1 tsp coriander powder into it and turn off the flame. Also add 1 tsp cumin powder, ½ tsp salt or as per taste and 1 pinch asafoetida. Mix well and add rice flour into the water. We have taken 1 cup (170 grams) rice flour. Mix really well with help of a spoon. We have mixed the flour in water, now cover and keep it aside for 20 minutes. After this knead the dough. 20 minutes are passed, now knead the dough. For this, take dough in a big bowl. Knead the dough like this with help of your hands. Keep the dough stiff and tight, same as required for making pooris. If required, add 1 to 2 tsp water into it. We are done with knead tight dough, grease your hands with some oil and knead again until smooth. Dough for making chakli is ready. For this, heat sufficient oil in a wok We require a polythene sheet for placing the chaklis over it and then we’ll fry it. For this we require chakli maker or machine. Place the attachment used for making chakli like this and screw it tightly. It comes with many attachments like one used for making fine sev, big sev, papdi, biscuits and so on. We have fixed the attachment for making chakli and now place kneaded dough into it. Make a lump from the dough and roll it like this lengthwise, so that it can placed into the machine cylinder. Add some dough, if possible after rolling it similarly. We are done with filling the machine with dough, now set the pestle over it. Pull up the pestle and set it like this. Now make chaklis over the polythene sheet spread over a board. Make chakli with three rounds. Likewise prepare rest of the chaklis The shape of chaklis can be rectified very easily. Oil is sufficiently heated; you can check it by dropping a small dough ball into it. The oil for frying chakli should not be too hot. Oil is hot sufficiently; now place the chakli into it for frying. Keep the flame medium. Very gently separate the chakli from polythene sheet and place it in oil for frying. Place 3 to 4 or as many chaklis as possible into oil for frying. Fry the chaklis from all sides until they turn golden brown in color. Chaklis have turned slightly brown in color, turn the sides. Keep tossing the chaklis and fry until they turn golden brown in color. Chaklis have turned golden brown in color, take them off flame. Likewise fry rest of the chaklis. Meanwhile prepare rest of the chaklis over the polythene sheet. Chaklis have turned golden brown in color, take them off flame. We have fried all chaklis, now turn off the flame. It takes 6 to 7 minutes for frying chaklis at one time. With this quantity of dough 30 chaklis can be prepared. Mouth drooling, crispy and tantalizing rice flour chaklis are ready. To make chaklis spicier you can sprinkle some chaat masala over them and mix nicely. Making chaklis is quite easy, but make note of few things. Make sure you don’t knead too thin dough and it’s not too dry. Knead dough same as required for making pooris. Also, keep a not that oil is not too hot. Oil should be medium hot and also, flame is kept medium-high. Fry until they turn golden brown in color. Once the chaklis cool, store them in any container and relish eating for 2 months.
